Easy Quiche

Part of being a busy wife and mommy is creating easy quick menus. My husband is not a fan of quiche, but because our little man loves eggs I had a hunch he would be. This quiche will become a freezer meal prep staple, especially since it was a hit with BOTH boys.

RECIPE:

2 Cans Crescent Rolls

6 Eggs

1/2 Cup Milk

2 Tablespoons finely chopped black olives

1/4 Cup finely chopped red bell peppers

1/4 Cup chopped broccoli

1/4 Cup shredded carrot

1/4 Cup chopped onion

4 Strips of Bacon cooked and chopped (can sub bacon bits)

3/4 Cup shredded cheese for topping

Heat oven to 375. Line or grease muffin pan (dozen). Take individual crescent roll and form dough into a circle. Press dough into each muffin space. Bake for 5 minutes.

In a bowl mix together all other ingredients. *Milk can be substituted with Almond or Soy milk for a dairy free option.

Take pan out of oven and fill each muffin to the top with egg mixture. Bake until firm approx. 20-25 minutes. Sprinkle with cheese and serve warm.
