Blueberry Syrup

This summer has been hot in the PNW. Record breaking hot. In order to keep our house from turning into a sauna we have tried to get more creative with our meals. I'm a breakfast any time of day kind of girl, but my husband just is not. I am thrilled to announce I have conformed him with two bribing words: blueberry syrup. This is the best blueberry syrup, and I loved how quick and easy it was to make.

RECIPE:

2 1/2 cup blueberries

3/4 cup sugar, (you can lower to 1/2 if your berries are ripe)

1/2 cup water

1 tsp fresh lemon juice

Mix together in a small pot,. Simmer about 12 minutes. Cool and bottle.

*keeps for about 1 week in the fridge.
