Pico De Gallo

It's Taco Tuesday so Jaylin and I decided the best way to spend our evening would be snacking on fresh Pico de Gallo and catching up on Bachelor in Paradise. If Kyle had it his way, every single meal would involve Mexican food of some sort.

This is the easiest, quickest, healthy snack. Get your knife sharpened and your chips open.

What you will need:

1 Can Rotel (diced tomatoes and green chilis)

2 Cups fresh diced tomatoes. We used cherry tomatoes fresh from the garden. Romas or vine work too.

2 Medium sweet banana peppers. Bonus points if these are fresh from your garden also like ours.

1 Medium yellow onion

1 Small jalepeno (optional)

1 Bundle cilantro (you will add to taste, about 3 Tbsp finely chopped)

Salt and Pepper to taste

Open can and pour into medium sized bowl. Set to the side while you prepare the fresh ingredients. Chop peppers, onion, and tomato into small chunks. Roughly the size of a dime or smaller. Mix into bowl. Finely chop jalepenos and cilantro and toss in. Mix all ingredients well and add salt and pepper to taste.

Get your bag of chips (Juanita's are the BEST) and enjoy!!
