Compliments of one of my dear sister in laws, this recipe is so simple. If you love pickles, but canning is daunting, this is for you. These are sweet pickles, I've attempted making many dill pickle recipes and none are quite right so I still with the store bought for now.
These will last in your fridge up to ONE year, and they go great with tuna, egg salad, or anything else you love pickles or relish on.
Recipe
-About 6lbs sliced cucumbers. The skinnier the cucumber the crisper the pickle.
-2 onions thinly sliced
-4 cups vinegar
-1/2 cup salt
-4 cups sugar
-1 1/2 tsp tumeric
-1 1/2 tsp mustard seed
* garlic cloves and jalapenos can be added to spice it up.
Place onion (garlic, jalapeno) and sliced cucumbers in a Mason jar. Pack them down, as they will rise when the brine is poured in. Set aside.
Stir vinegar, salt, sugar, tumeric, and mustard seed. Once dissolved pour over cucumbers. No need to cook! See so simple. Secure lids, give it a little shake and place in the fridge.
Wait 4 weeks to open, then enjoy.
