Tomato-Pesto Chicken

With Lisa's never ending garden we decided to try some tomato dishes. This was actually a huge hit and we all loved it. Super easy and super yummy.

Ingredients:

  • 4 Chicken Breasts or tenders

  • Seasonings of your choice

  • 1/2 TBLSP Pesto per chicken piece

  • 1 medium tomato or however many you wish, sliced thin

  • 1 cup shredded mozzarella cheese

  • parmesan cheese to sprinkle

I didnt put measurements because its really all to taste and depends on the quantity of people you are feeding.

Instructions:

Slice chicken breast horizontally or lay out tenders to create the amount needed. Lighly season with seasons of your choice. We just used garlic salt, salt, pepper and a season mix. Preheat the oven to 400° F. Place the chicken on sheet, spread pesto over each piece of chicken. Pesto can be strong, we didnt use too much but you want enough so you can taste. Bake for 15 minutes or until chicken is cooked.

Remove from oven, top with tomatoes & cheese.

Bake for another 5-10 minutes or until cheese is all melted. Serve plain or with noodles of choice.
