There is something about September that leaves everyone's schedules a bit chaotic. Chaos in life always leaves me searching for quick and easy meals, because let's be real at the end of the day even this mom wants to relax.
This recipe was created with a little tweaking of a previous recipe you can find here. Take the quick and easy rolls, throw in some meat and veggies and you have a filling meal that honestly tastes even better the next day for lunches.
Recipe:
-1lb lean ground beef or turkey
-1 can condensed cream of mushroom soup
-1 medium red bell pepper, chopped
-1 medium onion finely chopped
-1/2 head of cabbage chopped (optional)
-2 garlic cloves minced
-salt and pepper to taste
-12 small balls of dough (use quick roll recipe above)
Instructions: preheat oven to 400
1. In a large skillet add garlic and hamburger. Cook on medium heat until browned.
2. Add in peppers, onions, and cabbge. Cook until vegetables are soft, about 5-7 minutes.
3. Stir in condensed soup and let sit on low heat while you prepare the dough for filling.
Take dough and separate into 12 small balls. Take one ball at a time and flatten into small circle. I do mine about 4-5" in diameter. Keep in mind you want the dough to be thick enough that it won't tear when you add filling. Next take a large serving spoon and carefully add 2-3 scoops of filling into the center of the circle. Pinch dough to the top forming a close pocket or ball. Continue with the rest of the dough until complete.
Bake for about 10 minutes or until golden brown on top.
