Vegetable Frittata

2 tbsp butter

1 Cup Broccoli

1 Cup Mushrooms

1/4 Cup chopped Onion

1/2 Cup red bell pepper

8 large Eggs

3/4 Milk

1 tsp dijon mustard

1/2 tsp salt

1/2 tsp pepper

3oz crumbled feta

Since this recipe is quite large, it was cut in half and made plenty.

Preheat overn to 400, Melt butter in a 12 inch nonstick pan, muffin pan or really any pan of your choice. Saute vegetables of your choice. Whisk eggs with milk, mustard, salt and pepper. Pour vegetables into egg mixture. Pour in pan(s) and sprinkle feta over the top.

Place in oven for 12-15 minutes. Serve hot or at room temperature. Enjoy!
