In honor of October here is my favorite fall cookie recipe. The first time I had these was while living in Salt Lake City. I thought they sounded odd, but after tasting them my idea of the perfect fall treat was changed forever.

Although I love making these from scratch as well, this is the quickest way to whip up this delicious treat.

Ingredients:

- Krusteaz Pumpkin Spice Quick Bread Mix

- 1 Stick butter, softened (They turn out just fine even with half the butter too!)

- 1 Egg

- 3/4 Cup pumpkin puree

- 2 Cups Chocolate Chips (White or Dark)

Directions: Preheat oven to 350*

-Add bread mix, softened butter, egg, and puree to a large bowl and beat on low until mixture is smooth.

-With a large spoon slowly fold in chocolate chips.

-Scoop approx 2Tblsp balls onto non-stick cookie sheet.

-Bake for 8-10 minutes

Yields about 2 dozen depending on desired cookie size
