Zucchini Casserole

This is our absolute favorite during zucchini season (when its in season) but often find I crave it during the off season so make it anyway.



1 box Stovetop chicken stuffing
1 can of cream of chicken (only use this kind)
1- 1/2 cup shredded carrots
3-4 green zucchini, thinly sliced
1 1/2 cup sour cream
Boil zucchini until soft, drain and add in with carrots. Mix cream of chicken, sour cream together, mix in carrot/zucchini mixture.
In frying pan, melt butter and add Stovetop dressing and mix. Put 1/2 of the dressing along the bottom of a greased 9x13 (save other half for the topping)
Put zucchini/carrot/soup/sour cream mixture over dressing in 9x13. Top with remaining dressing mixture
Bake 375 until bubbly, around 20-30 minutes
