Whole30 Broccoli Foil Side

I'm all for healthy eating, but I am a very firm believer in maintainting a healthy weight, and fueling your body. I won't lie, I've gone to extremes with dieting in the past, but as an adult I'm much more aware of disordered eating and body images. I think the best diet is a well rounded diet. Don't cut anything out completely, sometimes we need a good dose of wine, cheese, and bread. I don't eat Whole30 solely, but because we are into gardening at my home, we began using Whole30 recipes a few years ago. Whole30 is one diet I can get behind because it is relatively easy to whip up delicious meals and sides.

Here is a simple and quick side that my toddler AND husband gobble up.

Ingredients:

4-5 Cups broccoli florets

3-4 Red potatos, washed & cut into small chunks

3 Tblsp Olive Oil (extra virgin, Whole30 approved -check label)

3 Cloves minced garlic

1 Tblsp Italian Seasoning (Organic, no sugar Whole30 approved)

*other spices may be added to taste: dill, onion powder, red pepper, black pepper, etc

**If you are not looking for a strict Whole30 dish, you can sprinkle with parmesan

Instructions:

  • Preheat oven to 400*

  • In a small bowl, whisk together olive oil, garlic, Italian seasoning, and any other seasonings of choice.

  • Cut four sheets of foil, roughly 12 inches long. Divide broccoli and potatoes into 4 equal portions and add to the center of each foil in a single layer.

  • Fold up all 4 sides of each foil packet. Spoon the garlic mixture over the broccoli and potatoes. Fold the sides of the foil over the vegetables, covering and pinching closed at the center.

  • Place foil packets on a baking sheet, and bake until desired tenderness (check at 15, mine took about 25minutes)

  • Serve immediately, sprinkled with Parmesan if desired.
